Shrimp Lettuce Tacos
This shrimp lettuce tacos recipe is so fresh and delicious. Prepare to be amazed by sensational flavors and crispness. What’s more, it’s incredibly quick and effortless to whip up, making it an ideal choice for a perfect weeknight meal.

Ingredients
- 120g of shrimp
- 1 garlic clove (minced)
- 4 romaine lettuce leaves
- 60g nonfat Greek yogurt
- 2 tbsp of lemon juice
- 3 tbsp of chopped tomatoes
- 2 tsp of chopped onions
- ¼ cup of chopped pineapple
- 2 tsp of olive oil
- ½ tsp total seasoning (optional)
- Parsley (or dill, cilantro)
Directions
- In a bowl mix all the ingredients for the pineapple “pico de gallo” salsa: 1 tbsp of lemon juice, tomatoes, onions, and pineapple. Refrigerate until ready to use.
- In a separate bowl combine the shrimp, 1 tbsp of olive oil, garlic, and parsley. Let it marinate for 10 minutes.
- In another bowl stir together 1 tbsp of lemon juice, 60g of nonfat Greek yogurt, pinch of salt, pepper, pinch of parsley and ½ tbsp of total seasoning.
- Heat a large skillet over medium-high heat. Cook the shrimp with 1 tbsp of olive oil until golden brown and cooked through (about 3 minutes each side).
- Assemble your tacos by filling each romaine lettuce leaf with the pineapple pico de gallo, shrimp, and pour the Greek yogurt dressing.
