Shrimp Lettuce Tacos

Ingredients

  • 120g of shrimp
  • 1 garlic clove (minced)
  • 4 romaine lettuce leaves
  • 60g nonfat Greek yogurt
  • 2 tbsp of lemon juice
  • 3 tbsp of chopped tomatoes
  • 2 tsp of chopped onions
  • ¼ cup of chopped pineapple
  • 2 tsp of olive oil
  • ½ tsp total seasoning (optional)
  • Parsley (or dill, cilantro)

Directions

  1. In a bowl mix all the ingredients for the pineapple “pico de gallo” salsa: 1 tbsp of lemon juice, tomatoes, onions, and pineapple. Refrigerate until ready to use.
  2. In a separate bowl combine the shrimp, 1 tbsp of olive oil, garlic, and parsley. Let it marinate for 10 minutes.
  3. In another bowl stir together 1 tbsp of lemon juice, 60g of nonfat Greek yogurt, pinch of salt, pepper, pinch of parsley and ½ tbsp of total seasoning.
  4. Heat a large skillet over medium-high heat. Cook the shrimp with 1 tbsp of olive oil until golden brown and cooked through (about 3 minutes each side).
  5. Assemble your tacos by filling each romaine lettuce leaf with the pineapple pico de gallo, shrimp, and pour the Greek yogurt dressing.
