    Ingredients

    • 100g 97% lean ground beef
    • 2 oz low fat mozzarella
    • 3 tbsp chopped onion
    • 1 eggwhite
    • ½ tsp garlic poder
    • ¼ cup sliced green bell pepper
    • 2 tbsp oats
    • Salt & pepper
    • Ketchup (Optional, if no heartburn)
    • Pickles (Optional)

    Directions

    1. Start by preheating your oven to 375°F (190°C).
    2. Take the chopped onion and sliced green bell pepper, and sauté them lightly in a non-stick pan
    over medium heat for about 3-5 minutes, or until they’re just softened. This step is optional but
    can add a nice texture and mellowed flavor to your meatloaves.
    3. In a large mixing bowl, combine the 97% lean ground beef, sautéed onions and green bell
    peppers, 1 oz of shredded mozzarella, egg white, garlic powder, and oats. Season the mixture with salt and pepper according to your taste. Mix everything together until well combined. The oats and egg white will help bind the mixture, making it easier to form into mini meatloaves.
    4. Divide the mixture into 2 portions (you can decide the size based on your preference or dietary
    needs, but typically, this mixture should make about 2 mini meatloaves). Shape each portion into a small loaf and place them on a baking sheet lined with parchment paper or a cupcake tray.
    5. Place the mini meatloaves in the preheated oven and bake for about 35 minutes, or until they are cooked through.
    6. If you’re using ketchup, you can brush a little on top of each mini meatloaf and add 1 oz of low-fat cheese for a classic cheeseburger flavor. Serve with pickles on the side if desired and enjoy
    your cheeseburger-inspired feast!
