Ingredients

  • ½ cup of egg whites
  • 1 tsp of olive oil (extra virgin)
  • 1 cup of fresh spinach (pressed down)
  • 1 oz of fresh mozzarella 
  • 1 pinch of salt

Directions

  1. Place egg whites, spinach, and salt in a Vitamix or blender.
  2. Blend on high speed for a few seconds until smooth.
  3. Heat the olive oil in a skillet over medium-high heat.
  4. Pour egg mixture in the pan, reduce heat to medium.
  5. Flip the omelette one time, and then fill it with the mozzarella cheese and add spinach as desired.
  6. Serve and enjoy! 😊
