Ingredients
- ½ cup of egg whites
- 1 tsp of olive oil (extra virgin)
- 1 cup of fresh spinach (pressed down)
- 1 oz of fresh mozzarella
- 1 pinch of salt
Directions
- Place egg whites, spinach, and salt in a Vitamix or blender.
- Blend on high speed for a few seconds until smooth.
- Heat the olive oil in a skillet over medium-high heat.
- Pour egg mixture in the pan, reduce heat to medium.
- Flip the omelette one time, and then fill it with the mozzarella cheese and add spinach as desired.
- Serve and enjoy! 😊
