Colorful Chicken Fajitas
Delight in the flavors of Mexico with these bariatric-friendly chicken fajitas (fajitas de pollo). They’re easy, healthy, and bursting with taste! These traditional chicken fajitas are seasoned to perfection and quickly cooked in a skillet, making them a fantastic one-pan meal that the entire family can enjoy. Plus, they’re ready in under 20 minutes! No excuses for not having time to whip up this healthy protein-rich recipe.

Directions
- Start by preparing the chicken breast. Slice it into thin strips to make it suitable for fajitas. In a small bowl, mix the olive oil, the juice of 1 lemon, paprika, minced garlic, a pinch of salt, and pepper to create a marinade. Stir well to combine the flavors.
- Place the chicken strips in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken and make sure it’s evenly coated. Seal the bag or cover the dish and let the chicken marinate for at least 10 minutes. You can leave it in the refrigerator longer for a more intense flavor.
- While the chicken is marinating, slice the red, green, and yellow bell peppers into thin strips. Thinly slice the red onion as well.
- Heat a skillet or a pan over medium-high heat. Once hot, add the marinated chicken strips. Cook them for about 8 minutes or until they are cooked through and slightly browned. Stir occasionally to ensure even cooking. Remove the cooked chicken from the skillet and set it aside.
- In the same skillet. Toss in the sliced bell peppers and red onions. Sauté them for about 3-4 minutes until they become tender and slightly caramelized.
- Return the cooked chicken to the skillet with the sautéed peppers and onions. Mix everything together and heat for an additional 2 minutes to ensure all the ingredients are warm.
- Serve your delicious chicken fajitas, you can use lettuce leaves as a wrap. Top with your favorite condiments like salsa.
