Ingredients
- 110 grams of silken firm Tofu
- ¼ cup of oats (ground)
- ¼ cup of almond milk
- 3 tbsp of pumpkin puree
- ¼ tsp of salt
- ½ tsp of vanilla extract
- ¼ tsp of baking powder
- Optional: monk fruit drops up to taste (2-3)
Directions
- Start by getting your blender or food processor ready.
- Then combine all moist ingredients: add the silken firm tofu, almond milk, pumpkin puree, vanilla extract, monk fruit drops and blend until the mixture is smooth and creamy.
- Incorporate all dry ingredients: in a separate bowl, mix the oats, salt, and baking powder. Gradually add this dry mixture to the blended moist ingredients, blending again until everything is well combined. The batter should be smooth and pourable.
- Heat the pan: heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking spray or a touch of oil.
- Cook the pancakes: pour the batter onto the hot skillet to form pancakes. Cook for 2-3 minutes on each side or until they turn golden brown.
- Serve: once the pancakes are cooked, transfer them to a plate. You can top them with a dollop of Greek yogurt, or a sprinkle of cinnamon for extra flavor.
- Enjoy: your Silken Tofu Pumpkin Pancakes are now ready to be enjoyed as a delicious and nutritious breakfast or snack.
