Creamy Salmon Bake
Enjoy the creamy and flavorful goodness of this dish, made from basic ingredients. Crafted with care, this delicate creation stands as a lifesaver during the post-surgery puree diet phase, offering both nourishment and indulgence. This dish is a nutrient-packed, protein-rich option that won’t overwhelm your stomach in those crucial early weeks post-surgery.
Consider for:
- Post-op diet, stage 3, pureed food (17 -30 days post-op)
Servings: 2-3 small post-op meals (depending on individual tolerance), the recipe produces one small baking dish, 250g approx.
For the entire recipe: 45 – 54 % of your daily caloric intake
(Based on 500 – 600 Cals per day)
Ingredients
- 2 cups of spinach
- ¼ cup of nonfat ricotta cheese
- 2 tbsp of shredded nonfat mozzarella
- 3 oz of raw salmon
- Pinch of salt
- 1 sprinkle of Italian herb seasoning
- 1 teaspoon of olive oil
- 1 clove of garlic
Directions
- Sauté one garlic clove and finely chopped spinach with ½ tsp olive oil, until it becomes very soft and reduced.
- Grill the salmon with ½ tsp olive oil and add the fine herbs seasoning, around 5 minutes on each side.
- Add the ricotta cheese, mozzarella, spinach, salmon, and a pinch of salt to a food processor. Use the “food chop” option to blend everything until you achieve a smooth mixture.
- Place the mixture in a small baking dish and bake it for 10 minutes at 350 degrees Fahrenheit.
- Enjoy every spoonful!
